This week’s Publix ad made dinner planning so easy. I built an entire week of family dinners around the BOGOs and sales, using my Capsule method: 7 nights, each with a theme. The themes stay the same; the sales decide the meals.

Note: deals are based on this week’s Publix ad and may vary by store and region. Buy what your family likes and needs, and check your pantry first!

Night 1: Crockpot Night

Marinated pork loin + salad + rice

  • 2 marinated pork loins (BOGO). Cook both and save one for tomorrow!
  • Bagged lettuce, cucumbers, grape tomatoes (all BOGO)
  • 90-second rice, 2 packs (BOGO)

How: Place both pork loins in the crockpot and cook on low 6 to 8 hours, until tender (at least 145°F inside). Slice one for dinner with salad and rice. Shred the second one and refrigerate it for Remix Night.

Night 2: Leftover Remix Night

Pork carnita tacos (or buy rice to make bowls)

  • Leftover shredded pork from Night 1
  • Taco kit or tortillas, salsa, guacamole, lime juice (all BOGO)
  • Cilantro (and BOGO hot sauce if your family likes heat)
  • Whatever other toppings or rice/beans etc you like

How: Crisp the shredded pork in a hot skillet with a squeeze of lime juice until the edges get brown. Pile into warm tortillas with salsa, guac, and cilantro. Cook once, eat twice!

Night 3: Pasta Night

Lazy lasagna

  • Ground chuck
  • Ragu or Botticelli sauce (BOGO)
  • Ricotta (half price)
  • Shredded mozzarella and parmesan (BOGO)
  • Lasagna noodles (Publix brand is fine)

Recipe here! It couldn’t be easier!

Night 4: Convenience Night

BBQ pulled pork sliders + apple slaw

  • Curly’s BBQ pulled pork (BOGO)
  • Hawaiian rolls (BOGO)
  • Apple slaw

How: Heat the pulled pork, pile it onto rolls, and serve with slaw. Dinner in 10 minutes, and it still counts as a home-cooked night.

Night 5: All-in-One Night

Sheet pan smoked sausage + fall veggies

  • Smoked sausage (BOGO)
  • Mini sweet peppers, 1 bag (half off)
  • Brussels sprouts (2 for $5)
  • Butternut squash (99¢/lb!)

How: Slice the sausage, halve the Brussels sprouts, cut up the peppers, and cube the squash. Toss everything with oil, salt, and pepper on a sheet pan and roast at 425°F for about 25 to 30 minutes, until the veggies are tender and browned. One pan, done.

Night 6: Flex Night

Grilled chicken + baked (or roasted) potatoes + salad

  • Chicken breast tenderloins (BOGO)
  • Russet potatoes baked (plus your favorite baked potato toppings) OR roasted
  • Salad kit

How: Grill the chicken tenderloins, and make extra for tomorrow! Bake the potatoes at 400°F for about 50 to 60 minutes, until a fork slides in easily (or if roasting, cube, toss with oil, and cut time to 25 minutes, tossing halfway). Serve with the salad kit.

Night 7: Kids’ Favorite Night

Mac and cheese with grilled chicken (bonus remix!)

  • Annie’s mac and cheese (BOGO)
  • Leftover grilled chicken from Night 6
  • Fresh green beans (Publix brand, on sale in produce)

Or: Nathan’s hot dogs with buns (both BOGO).

How: Make the mac and cheese, cut up leftover chicken, and steam the green beans. Easy, cozy, and the kids will actually eat it.

I’m Lizanne

I’m a wife, a mom of four, an attorney, a friend…and someone who believes a simpler life is a happier one. Somewhere between feeding a family, thrifting hand-me-downs, and keeping up with everyday life, I discovered that small, simple systems make the biggest difference. My brain is always thinking through how to keep families organized and prepared for whatever life brings. But at heart, I’m just a mom who loves helping other moms save money, save time, and feel encouraged. Pull up a chair. I’m so glad you’re here!
