Unstuffed Pepper Skillet

This is one of our favorite meals and it’s so easy to come together. Our kids call it “pizza casserole” because it does have the flavor of pizza!

Ingredients

1 pound ground beef (or turkey or italian sausage)

1 cup rice of choice, cooked (could use microwave kind to cut time. I use my instantpot and brown rice. We’ve also used steamable cauliflower rice before, too)

1 cup shredded cheddar cheese (or cheese blend like colby jack)

1 15oz can of tomato sauce

2 bell peppers, cut into strips (can use green or any color)

1 small onion, cut into small slices (we’ve omitted before and done a 3rd pepper no problem)

Seasonings – dashes of garlic, italian seasoning, salt, and pepper. measure with your heart

Preparation

In a large skillet that can be transferred to the oven (if you don’t have this – use skillet you have and use the lid at the end- will explain), brown ground beef with garlic and italian seasoning

While meat is browning, cook rice of choice

Transfer beef mixture to a plate and place sliced onions and peppers in skillet (remove some grease if needed- but not too much- that way veggies don’t stick)

Cook onions and peppers on medium-low until soft, about five minutes or so

Transfer cooked onions and peppers to plate on top of cooked beef

Place cooked rice in skillet, then add tomato sauce, cooked peppers/onions, and ground beef. Stir to combine

Top mixture with shredded cheese, allowing to cook on low a few minutes

Stick skillet in oven on broil for JUST A MINUTE OR TWO to let cheese melt (or put lid on your skillet and stay cooking on low until melted)

Serve portions with a simple salad!

Publix Weekly Meal Plan

I’m excited to share this week’s Publix plan with y’all! I was just talking with someone about cutting grocery costs, and we talked about the pinch point of DRINKS! It’s fun to have something other than water, but the costs can really add up. BUT! this week there are several options on sale! I’ve included waterloo sparkling water in our budget this week, but there’s also sale on soda and tea products!

You’ll find the meal plan attached below (in very small print – I’m trying to figure out how to fix this). And a small request- if you don’t mind sharing/tagging me on social media @simplywithLC I would appreciate it! Happy saving everyone!!

Aldi Weekly Meal Plan

The votes are in and this week we are doing an Aldi meal plan! While you can’t necessarily get all your groceries at Aldi, I love shopping there for two reasons. One, obviously, you save a good amount of money (even on organics and specialty items) and two, it’s QUICK! It’s a great place to stop to stock up on items, or just do a quick pick-up without walking around a huge store.

Would love your thoughts on this! You’ll find the download below.

Publix Weekly Meal Plan

Hi friends!

I’m so happy you’ve trusted me to make a Publix weekly meal plan for you to use. The plan includes a full grocery list for five simple dinners, five breakfast options, several lunch options, and of course snacks. This specific plan is for around $130 *HOWEVER* do not set yourself on that exact goal. The goal here is to CUT your grocery spending. You may have a special diet, bigger kids/appetites, etc and will need to account for that! So even adding $50 in your personal extras will land you in a good spot in my opinion! I’ve heard so many trying NOT to spend $300/week at Publix and this is a great start.

You will notice that this is a very SIMPLE (but not skimpy!) list. This will easily feed my husband, our three (small) children, and a nursing (hangry) mama. We do not drink anything but coffee (included) and water. We also don’t buy single-size snacks (although 12 cheezits are included). Because we save so much weekly, I will often “splurge” on sparkling waters and fun snacks when I shop at Sam’s- they’re cheaper and last the whole month. Be sure to estimate the cost of these if you prefer to buy weekly!

The KEY with Publix (and any grocery store really) is basing your meal plan on what’s on sale. If you’re hoping to save big this year, you may have to first start by cutting ties with specific products/brands. Also watching impulse purchases and convenience foods (but again, there’s margin for that!). Lastly consider rotating which fruits (this week it’s berries, apples, & mandarin cups) and snacks you buy weekly.

None of this meal plan involves making anything from scratch nor does it include involved recipes. The most you’ll be doing is cutting up strawberries, putting together salad kits, and cooking the proteins in your meals.
